Slow-Cooker Confetti Brown Rice

Ingredients

  • 1 1/2 cups sliced fresh mushrooms (4 oz)
  • 1/2 cup chopped carrot
  • 1/2 cup chopped red bell pepper
  • 1/2 cup uncooked extra long-grain brown rice
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup chopped fresh broccoli

Instructions

    Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix all ingredients except broccoli.

    Cover; cook on High heat setting 2 hours 30 minutes to 3 hours 30 minutes.

    Stir in broccoli. Cover; cook 15 to 20 minutes longer or until broccoli is crisp-tender.
