Shrimp Salad Sandwiches

Ingredients
- 3 tablespoons reduced-fat mayonnaise or salad dressing
- 1 teaspoon soy sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon ground ginger
- 1 can (4 to 4 1/2 oz) tiny shrimp, drained, rinsed
- 1 medium green onion, sliced (1 tablespoon)
- 2 teaspoons butter, softened (do not use margarine)
- 4 slices whole wheat bread
- 1/2 medium cucumber, thinly sliced (3/4 cup)
Instructions

Step1In small bowl, mix mayonnaise, soy sauce, sugar and ginger. Stir in shrimp and onion.

Step2Spread butter on 1 side of 4 bread slices. Top 2 bread slices with cucumber slices. Spread about 1/3 cup shrimp mixture on cucumber slices; top with remaining bread.
