Chicken at its easiest and most flavorful! The three-ingredient marinade adds moisture and flavor to otherwise ordinary chicken breasts.

Ingredients

  • 1/2 cup dry sherry or apple juice
  • 1/4 cup olive or vegetable oil
  • 3 tablespoons soy sauce
  • 6 boneless skinless chicken breast halves (4 1/2 pounds)

Instructions

    Stir together sherry, oil and soy sauce. Cut chicken into strips, 6x1x1/4 inch. Pour sherry mixture over chicken in glass baking dish. Cover and refrigerate at least 4 hours but no longer than 24 hours, turning chicken occasionally.

    Set oven control to broil. Thread chicken onto six 8-inch metal skewers (discard sherry mixture). Place chicken on rack in broiler pan. Broil with chicken 4 to 5 inches from heat 8 to 10 minutes, turning once, until no longer pink in center.
