- 2 tablespoons olive or vegetable oil
- 2 cloves garlic, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 lb mushrooms, sliced (6 cups)
- Chopped fresh parsley, if desired
