Red Pepper-Lentil Soup

Ingredients
- 2 teaspoons canola oil
- 1/2 cup chopped onion (1 medium)
- 4 cloves garlic, finely chopped
- 1 cup dried lentils, sorted, rinsed
- 1 can (14 oz) fat-free chicken broth with 33% less sodium
- 3 cups water
- 4 oz fully cooked low-fat turkey kielbasa, cut lengthwise in half and cut crosswise into slices (1 cup)
- 1/2 cup drained roasted red bell peppers, chopped
- 2 tablespoons chopped fresh basil leaves
- 1/8 teaspoon pepper
Instructions

Step1In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook until tender. Stir in lentils, broth and water. Heat to boiling. Reduce heat; cover and simmer 15 minutes.

Step2Stir in remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 4 to 5 minutes or until lentils are tender.
