- 1 lb pork tenderloin, cut into bite-size pieces
- 2 teaspoons salt-free Southwest chipotle seasoning blend
- Cooking spray
- 1 can (15.5 oz) white hominy, undrained
- 1 can (14.5 oz) Mexican-style stewed tomatoes with jalapeño peppers, garlic and onion, undrained
- 1 cup water

Step1Spray 3-quart saucepan with cooking spray; heat over medium-high heat. Sprinkle pork with chipotle seasoning blend; spray pork with cooking spray. Add pork to pan; cook 4 minutes or until browned.

Step2Stir in hominy, tomatoes and water. Heat to boiling; reduce heat. Cover; simmer 20 minutes or until pork is tender.
