Ingredients
- 4 cups uncooked penne pasta (14 ounces)
- 2 tablespoons olive or vegetable oil
- 2 tablespoons margarine or butter
- 1 medium onion, thinly sliced
- 1 head radicchio, cut into 1/4-inch strips
- 1/2 cup dry white wine or vegetable broth
- 1 cup half-and-half
- 1/2 teaspoon pepper
- 1/4 cup freshly grated Parmesan cheese

Step1Cook and drain pasta as directed on package.

Step2While pasta is cooking, heat oil and margarine in 10-inch skillet over medium-high heat. Cook onion in oil mixture, stirring occasionally until tender. Stir in radicchio; cook until tender. Stir in wine; cook uncovered until liquid has evaporated.

Step3Stir in half-and-half and pepper. Heat to boiling; reduce heat. Simmer uncovered about 10 minutes, stirring frequently, until slightly thickened.

Step4Mix pasta and radicchio mixture. Sprinkle with cheese.
