Mediterranean Chicken Salad

- 1/2 cup mayonnaise
- 1 1/2 cups plain yogurt
- 1/2 cup fresh basil leaves
- 2 tablespoons lemon juice
- 2 cups cubed deli rotisserie chicken (from 2- to 3-lb chicken)
- 1 cup cubed cooked peeled potatoes
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 cup Greek olives, pitted
- 1/4 cup capers, rinsed
- 1/4 cup chopped red onion
- Salt and pepper to taste
- Mixed salad greens, if desired
Instructions

Step1In food processor, place mayonnaise, 1/2 cup of the yogurt and the basil. Cover; process until pureed. Add lemon juice. Cover; process just until blended. Transfer mixture to large bowl.

Step2Add remaining 1 cup yogurt; mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper.

Step3Cover; refrigerate 3 hours. Serve salad on mixed greens.
