Have a fiesta without all the work! This easy-yet-impressive way to enjoy shrimp for dinner comes to us from our Found Recipes cookbook. Large shrimp are marinated and grilled in a fresh, light marinade, made with fresh lime juice, spicy ground red pepper, as well as tequila, to deliver the flavor of a spiced margarita cocktail in an easy-to-make, festive shrimp dinner.

This is a perfect dish to serve for your Cinco de Mayo celebration or any summertime gathering. Serve these beauties over a bed of hot, cooked rice. Not only does it make the shrimp look even more impressive, but it can catch every drop of the flavorful marinade. What are the best sides to serve with this summery dish? Keep the party going with ears of grilled corn with chile-lime spread. If you know some of those around your table with come with big appetites, you could also offer slow-cooker pulled pork sandwiches. Ingredients

Marinade

  • 1/4 cup tequila
  • 1/4 cup red wine vinegar
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground red pepper (cayenne)
  • 1/2 teaspoon salt
  • 2 cloves garlic, finely chopped
  • 1 medium red bell pepper, finely chopped (about 1 cup)

Shrimp and Serve Withs

  • 24 uncooked extra-large (16 to 20 count) shrimp, peeled (with tails left on, deveined (about 1 1/2 lb)
  • 4 (10- to 12--inch) metal skewers
  • Cooked white or brown rice, if desired
  • Lime wedges, if desired

    In shallow glass or plastic dish, mix all marinade ingredients. Stir in shrimp. Cover and refrigerate 30 minutes.

    Heat gas or charcoal grill to medium for direct heat.

    Remove shrimp from marinade; reserving marinade. On each skewer, thread 6 shrimp. Place kabobs on grill.

    Cover grill; cook shrimp 4 to 6 minutes, turning and brushing once with marinade, until pink.

    In 1-quart nonaluminum saucepan, heat reserved marinade to boiling; reduce heat. Simmer uncovered over low heat about 5 minutes or until bell pepper is tender. Serve shrimp with rice and marinade; garnish with lime wedges.
