How to Make Jalapeño Popper Egg Rolls

Mix the Filling

For this tasty filling, stir together softened onion-flavored cream cheese, shredded sharp cheddar cheese, chopped, cooked bacon, and finely chopped jalapeño chiles. Softening the cream cheese makes the mixture easier to combine, so don’t skip that step. Also, we recommend removing the stems and seeds from the chiles to tame the heat a bit while also providing a smoother texture for the filling.

Prep the Egg Roll Skins

Lay out all the egg roll skins (also known as “wrappers”) on your work surface, with points facing up, down, left, and right, like diamonds. Using a pastry brush, paint the edges of each one with a little water to help the dough stick to itself and seal nicely.

Add Filling, and Roll Up

Add a little scoop of filling in the center of each egg roll wrapper diamond. Starting with the point closest to you, roll the egg roll skin over the filling, tucking the points on the left and right in as you roll, and gently press the edges down to seal. Then brush with a little vegetable oil to add color and shine to the egg rolls.

Bake or Air Fry and Serve  

Cook the egg rolls all at once on a parchment-lined rimmed baking sheet in the oven or in two batches in the air fryer. Carefully turning the egg rolls halfway through cooking ensures even browning. Then just add a dipping sauce, and dig in!

Ingredients

  • 1 package (7.5 oz) chive & onion cream cheese spread, softened
  • 1 cup shredded sharp cheddar cheese (4 oz)
  • 3/4 cup chopped, cooked bacon
  • 3/4 cup finely chopped jalapeño chiles, seeds and stems removed (about 4 jalapeños)
  • 8 egg roll skins
  • 2 tablespoons water
  • 2 tablespoons vegetable oil

    Heat oven to 425°F. Line rimmed baking sheet with cooking parchment paper.

    In medium bowl, mix cream cheese spread, sharp cheddar cheese, bacon, and jalapeño chiles.

    Place 1 egg roll skin on work surface with one corner facing you. Brush 1/2-inch border of skin with water.

    Spoon about 1/4 cup filling in middle. Fold corner facing you over filling, tucking point under. Fold in, then overlap right and left corners. Gently roll egg roll toward remaining corner; press to seal. Repeat with remaining egg roll skins and filling. Brush both sides of egg rolls with vegetable oil.

    Place assembled egg rolls on sheet pan. Bake 10 to 12 minutes, turning once, or until egg rolls are golden brown and hot in center (at least 165°F); serve warm.

    To make in the air fryer, set air fryer to 350°F and cook in two batches. Cook 4 egg rolls 5 minutes. With tongs, turn over each one; cook 4 to 6 minutes longer or until golden brown. Remove from air fryer. Repeat with remaining 4 egg rolls. Serve warm.
