Ham Pancake Sliders with Pineapple Sauce

Ingredients
Pineapple Sauce
- 1 can (8 oz) crushed pineapple
- 1/2 cup pineapple preserves
- 1 tablespoon brown sugar
- 1/2 teaspoon ground ginger
- 1/4 to 1/2 teaspoon red pepper flakes
Pancakes
- 2 packages (6 oz each) Canadian bacon slices
- 2 cups Original Bisquick™ mix
- 1 1/4 cups milk
- 2 eggs

Step1In 1-quart saucepan, combine all sauce ingredients. Heat to boiling; reduce heat to medium. Cook and stir about 2 minutes or until mixture is slightly thickened. Remove from heat; cool to room temperature.

Step2Heat oven to 300F. Place Canadian bacon slices on 15x 10-inch baking sheet. Place in oven until hot and ready to serve.

Step3In medium bowl, stir together Bisquick, milk and eggs. Spoon about 2 tablespoons batter for each pancake onto hot griddle. Cook until edges are dry; turn. Cook until golden brown.

Step4To make sliders; place one slice Canadian bacon on each of 10 pancakes; top with pineapple sauce and additional pancake.
