These potatoes are savory, sweet and cut in the impressive Swedish hasselback style. It’s a show-stopping side that’s dressed and ready to impress in melty Parmesan cheese. Plus, the cut of the potato allows for just enough herb butter to melt and infuse the potato with delicious, garlicky flavor.
Garlic-Herbed Hasselback Sweet Potatoes

Ingredients
- 2 medium sweet potatoes (about 8 to 10 oz each), scrubbed and dried
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 3 tablespoons butter
- 6 cloves garlic, finely chopped
- 1 tablespoon finely chopped fresh sage
- 2 teaspoons finely chopped fresh thyme
- 1/2 cup shredded Parmesan cheese (2 oz)
Instructions

Step1Heat oven to 425°F. Line rimmed baking sheet with foil. Generously spray with cooking spray.

Step2Cut sweet potatoes in half lengthwise. Place them cut-side down on cutting board. Cut sweet potatoes crosswise into 1/8-inch slices, leaving about 1/4 inch of bottom intact.

Step3Arrange sweet potatoes on baking sheet, rounded side up. Brush tops of sweet potatoes with olive oil; sprinkle with 1/4 teaspoon of the salt, then bake 35 to 40 minutes or until almost tender when pierced with a knife.

Step4Meanwhile, in 1-quart saucepan, heat butter, garlic, sage, thyme and remaining 1/4 teaspoon salt over medium heat until butter is melted. Remove from heat.

Step5Remove sweet potatoes from oven. Brush butter mixture over potatoes, using fork to open slices slightly as you brush, making sure to get some of the butter mixture into each slice.

Step6Bake 10 to 15 minutes or until tender. Sprinkle Parmesan cheese over tops of potatoes; continue baking 2 to 4 minutes or until cheese is melted.
