From our Bisquick Quick to the Table cookbook, these amazingly fresh-tasting sugar cookies are in bar form, so it makes a big batch with just one bake. What’s the secret to these ultra-fresh-tasting bars? It’s the addition of lemon zest in both the bars and the frosting, for that puckery, sweet-with-a-hint-of-tart thing that makes these sugar cookies taste this special.

Frosting

  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/8 teaspoon salt

Instructions

    Heat oven to 350°F. Spray 13 × 9-inch pan with cooking spray.

    In large bowl, mix Bar ingredients with spoon until soft dough forms. Press evenly into pan.

    Bake 21 to 25 minutes or until golden brown. Cool completely, about 1 hour.

    In medium bowl, beat 1 cup butter and 2 cups of the powdered sugar with electric mixer on low speed until blended. Beat in 2 teaspoons lemon zest, the lemon juice and salt. Gradually beat in remaining powdered sugar until well blended. If necessary, beat in additional lemon juice or water, 1 teaspoon at a time, until frosting is of desired spreading consistency.

    Spread frosting over bars. Cut into 6 rows by 4 rows. Store tightly covered at room temperature.
