How can I make homemade caramel?

Homemade caramel is very simple. All you need is sugar, heavy cream, and butter. If you can’t find candy caramels like I use in this recipe, you can buy those three ingredients and make it yourself.

What if I don’t have cooking parchment paper?

If you don’t have cooking parchment paper available, just use an ungreased cookie sheet. 

What else could I add to this recipe?

You can add some chopped apples on top of the caramel for something extra. They're the perfect add-on! 

What size cookie scoop should I use?

I used a 2 tablespoon-size cookie scoop, so my cookies were bigger than normal. If you use a smaller cookie scoop, you can make about 17 cookies. I just like my cookies nice and big!

    Heat your oven to 350°F.

    Line your cookie sheet with cooking parchment paper. Set aside.

    In a medium bowl, stir the cookie mix, softened butter, and egg until blended together. Using your cookie scoop, drop the dough on your cookie sheets about 2 inches apart so cookies won't touch when baked.

    Bake for 14 to 18 minutes or until the edges are golden brown.

    Meanwhile, in a small saucepan, melt caramels and water over low heat, stirring continually so the caramel doesn’t burn or stick, until melted and smooth. Remove from heat and set aside.

    Once the cookies are done, remove from oven and set them on your cooling rack to cool for 2 minutes. Top the cookies with your melted caramel, and let the caramel set for about 1 to 2 minutes.
