Couscous and Sweet Potatoes with Pork

- 1 1/2 cups uncooked couscous
- 1 pound pork tenderloin, thinly sliced
- 1 medium sweet potato, peeled and sliced into thin strips
- 1 cup thick-and-chunky salsa
- 1/2 cup water
- 2 tablespoons honey
- 1/4 cup chopped fresh cilantro

Step1Cook couscous as directed on package.

Step2While couscous is cooking, spray 12-inch skillet with cooking spray. Cook pork in skillet over medium heat 2 to 3 minutes, stirring occasionally, until brown.

Step3Stir sweet potato, salsa, water and honey into pork. Heat to boiling; reduce heat to medium. Cover and cook 5 to 6 minutes, stirring occasionally, until potato is tender. Sprinkle with cilantro. Serve pork mixture over couscous.
