Cheesy Kielbasa and Cabbage

Ingredients
- 4 slices bacon, cut into 1/2-inch pieces
- 3 medium red potatoes, unpeeled, cut into 3/4-inch cubes (3 cups)
- 1 large onion, coarsely chopped (1 cup)
- 1 package (12 oz) kielbasa, cut in half lengthwise then crosswise into 1-inch slices
- 1/2 cup from 1 carton (32 oz) Progresso™ Classic Chicken Broth
- 1/4 cup cider vinegar
- 5 teaspoons Dijon mustard
- 1 teaspoon caraway seed
- 1/2 large cabbage, coarsely chopped into 1-inch pieces (5 cups)
- 1 cup shredded smoked Cheddar cheese or Cheddar cheese (4 oz)
- 1 tablespoon chopped fresh parsley

Step1In 5-to 6-quart Dutch oven, cook bacon over medium-high heat until crisp. Using slotted spoon, place bacon on paper towel–lined plate; set aside.

Step2Add potatoes, onion and kielbasa to drippings in Dutch oven. Cook uncovered 5 minutes, stirring frequently, or until onion is tender.

Step3Add chicken broth, vinegar, mustard and caraway seed. Heat to boiling; reduce heat to low. Cover; simmer 8 minutes, stirring occasionally.

Step4Add cabbage; stir well. Cover; cook an additional 10 to 12 minutes, stirring occasionally, until potatoes are fork-tender and cabbage is crisp-tender. Remove from heat. Stir in bacon; sprinkle with cheese. Let stand 1 to 2 minutes or until cheese is melted. Sprinkle with parsley.
