Ingredients

Filling

  • 3 cups cored, peeled, diced apples
  • 2 teaspoons cornstarch
  • 1/4 cup light brown sugar
  • 2 tablespoons salted butter
  • 1 teaspoon ground cinnamon

Cookie

Streusel

  • 3 tablespoons unsalted butter, melted
  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cinnamon

Ice Cream

  • 1 pint vanilla ice cream

    Heat the oven to 350°F.

    In a medium saucepan, combine the Filling ingredients over medium-low heat, stirring frequently, until butter is melted and sugar is dissolved. Increase the heat to medium, and let it simmer for 5 minutes or until the apples are tender. Remove from heat, and let it cool.

    Meanwhile, in a small bowl, add egg, 1 teaspoon cinnamon, and vanilla. Whisk until well combined.

    In a medium bowl, add cookie mix, 1/2 cup softened butter and egg mixture. Stir until dough forms. Place dough in the freezer to chill.

    Meanwhile, melt 3 tablespoons unsalted butter in a small bowl, and let it cool.

    In a medium bowl, combine flour, 1/4 cup brown sugar, granulated sugar, salt, and 1/8 teaspoon cinnamon. Pour in the cooled melted butter, and mix together with a fork. Set aside.

    With an ice cream scoop, place chilled dough on a parchment-lined sheet pan. Flatten the dough balls, and make an indent in the middle of each cookie.

    Scoop a tablespoon of the apple filling into each indent.

    Gently add a tablespoon of the streusel on top of the apple filling.

    Bake cookies for 12 to 14 minutes or until golden brown. Let cool for about 5 minutes. Add a scoop of ice cream and enjoy!
