Fall reminds me of caramel apples and my family–making caramel with my mom and enjoying the sticky sweet treat with my sister and my dad. Crisp, yummy and delicious, they were such a childhood treat when the weather got colder, and I wanted to put a spin on a caramel apple with this modern take! This cookie starts off with the Betty Crocker™ Limited Edition Caramel Apple Cookie Mix and adds on a cream cheese frosting, apple chunks, and a drizzle of caramel, sure to warm up your cozy fall evenings.

How do I make sure my caramel is a good consistency?

Make sure to allow the caramel to cool for up to 1 hour until it is closer to room temperature, which will allow it to set and thicken in consistency.

Does it matter what apples I use?

Depending on if you like sweet versus tart, opt for either a sweeter Fuji apple, or a more tart Granny Smith, which is reminiscent of a classic caramel apple. Feel free to use your favorite apple type; you can't go wrong with any of them!

Ingredients

Cookies

Caramel

  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter, softened
  • 1/4 cup heavy cream, room temperature

Frosting and Topping

  • 5 oz (from 8-oz package) cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 3/4 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 Fuji or Granny Smith apples

    Heat the oven to 350°F, and line your pan with cooking parchment paper. Prepare and bake cookies as directed on the cookie mix pouch, using 1/2 cup softened, unsalted butter and egg.

    Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a silicone spatula or wooden spoon, for about 5 to 6 minutes. Sugar will form clumps and will melt into a thicker amber-colored liquid.

    Turn down the heat to low and stir in 3 tablespoons softened, unsalted butter. This will cause the caramel to bubble and rise, so you may want to use gloves during this step. Keep whisking until fully incorporated.

    After the butter is melted, slowly stir in the heavy cream until fully incorporated. The caramel will once again rise and bubble, so take extra precaution by wearing gloves. Boil for 1 additional minute, remove from heat, and allow to cool.

    Meanwhile, cream together the softened cream cheese, 4 tablespoons softened, unsalted butter, sifted powdered sugar, and vanilla until light and fluffy.

    Dice apples into small cubes for topping.
