Barley and Pine Nut Casserole

Ingredients
- 1 cup uncooked hulled or pearl barley
- 1 1/2 cups vegetable juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 medium stalks celery, sliced (1 cup)
- 1 medium bell pepper, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1 can (14 oz) vegetable or chicken broth
- 4 medium green onions, sliced (1/4 cup)
- 1/4 cup pine nuts, toasted

Step1In 3- to 4-quart slow cooker, mix all ingredients except green onions and nuts.
