Summer’s in full swing, so we put together an extra-special lunchbox that’s best enjoyed by the pool or at the beach. A total break from routine and inspired by the freewheeling days of summer break, we started this kid-approved lunchbox with a classic turkey and cheese rollup, swapping out the standard oven-roasted turkey for kettle-fried chicken breast—available at many delis—for extra summer flair.

Our irresistible Beach Ball Chex Party Mix, featuring two kinds of Chex cereal, cheese crackers, pretzels, and cheese balls, is the ultimate summer snack—one we always keep on hand for easy snacking and impromptu get-togethers. Staying with the sun-and-surf theme, we used a melon baller to make perfectly pop-able watermelon and cucumber bites. Another cool summer staple—GoGurt—helps fill kids up and doubles as an ice pack when popped in the freezer for a couple of hours. And what’s summer without ice cream? We went the no-melt route with a treat of Neapolitan astronaut ice cream that we found at a sporting goods store.
