Win the Potluck War with this Simple Slow-Cooker Queso

This easy dip is worth celebrating, one cheesy bite at a time.

Correct me if I’m wrong, but isn’t dip one of the best food inventions ever? I love that there’s a million ways to make it, from cool to hot, spicy or mild. And perhaps best of all, serving up a dip brings people together like nothing else. While I have a laundry list of favorite dips I like to bring to a party, none is as popular or as easy as simple queso. Two ingredients plus a slow cooker and boom, this delicious appetizer is ready to party. 

To start, let’s first talk about the tomatoes: Muir Glen fire-roasted diced tomatoes with green chiles. Yes there are other brands of tomatoes akin to this, but these Muir Glen tomatoes are something else. They taste so fresh, it’s unbelievable! They are delish times a thousand, and well worth seeking out.

Next, grab everyone’s favorite processed cheese product, Velveeta. You need 16 ounces of golden goodness, cut into cubes.

Throw the cheese into a small slow cooker. (This recipe doubles like a dream, which case you’d want to go with a larger crock.)

Now come the tomatoes! Dump in the entire can of deliciousness, no need to drain that scrumptious juice.

Put the lid on and let it melt! It takes about 2 hours to get to the creamy consistency everyone loves.

After the mixture has reached maximum melt, it is time to eat! Grab some chips and dunk to your heart’s delight! There won’t be any leftovers, promise.

Ingredients

    • 16oz Kraft™ Velveeta™ pasteurized prepared cheese product, cut into cubes
    • 1can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes with medium green chiles, undrained
    • Food Should Taste Good™ cantina tortilla chips, as desired

Directions

  • 1In 2 1/2- to 3 1/2-quart slow cooker, place cubed cheese and tomatoes.
  • 2Cover; cook on Low heat setting 2 to 3 hours or until cheese is melted. Stir until smooth.
  • 3Scrape down side of cooker with rubber spatula to help prevent edge of dip from scorching. Serve with chips. Dip will hold on Low heat setting up to 2 hours; stir occasionally.
