Fried Mashed Potato Sticks

Fried Mashed Potatoes are amazing. They’re crispy on the outside and creamy on the inside.

Did you know that you can fry just about anything? I’ve come to the conclusion you can. We all know fried food just tastes better. It does. I wish it didn’t but it does. Every now and then we just need something fried. Or is that just me?

We thought it might be fun to try out frying mashed potatoes. Yes mashed potatoes. Guess what? They’re amazing. They’re crispy on the outside and creamy on the inside. Plus when you dip them in homemade ranch dressing. WOW.

The trick to making these is to make sure your potatoes are frozen. Yes you’ll need to cook them and freeze them (you could even use leftover mashed potatoes which are already cold so you’re closer to fried food goodness.) Then you’ll cut them out using a cookie cutter. Stick with the smaller cookie cutters the larger ones will tend to fall apart. Sigh.

While your potatoes are freezing whip up a batch of my DIY Ranch Dressing to go with.

Ingredients

    • 3cups water
    • 2pouches (3.6 oz each) Betty Crocker™ Homestyle creamy butter mashed potatoes (just-add-water variety)
    • 3cups vegetable oil
    • Ranch dressing, if desired

Directions

  • 1In 2-quart saucepan, heat water to boiling. Turn off heat. Add potatoes. Mix to combine.
  • 2Spread potatoes onto an ungreased rimmed half baking sheet or 13x9-inch pan. Smooth top with spatula. Place in freezer about 1 hour or until frozen.
  • 3Using cookie cutter or sharp knife, cut out stick shapes. Return to freezer until oil is heated.
  • 4In deep-fat fryer or heavy saucepan, heat oil over medium-high heat to 350°F.
  • 5Carefully place frozen potato sticks into oil (being careful to not crowd pan) and cook until golden. Transfer cooked potato sticks to plate lined with paper towels to absorb excess oil.
  • 6Serve with a side of dressing.
