Tater Tot casseroles have been popular with families for many years and it’s no surprise why: they’re warm, comforting, easy to toss together and completely delicious. Why not transform this family favorite into an appetizer that can be enjoyed for game day snacking or any get-together? (Or you can make them for dinner, because bite-sized is always more fun!)
To put an extra twist on the tradition, I brought in a spicy flavor that every loves: Buffalo chicken!
You’re going to need a bag of frozen miniature Tater Tots, some cooked, diced chicken, buffalo sauce, cream cheese, frozen mixed vegetables, and shredded cheddar cheese.
While the Tater Tots are in the oven, prepare the filling. Put the chicken, Buffalo sauce, cream cheese and frozen mixed vegetables into a sauce pan and set over low heat to melt together. Stir this mixture often so the cream cheese doesn’t burn on the bottom of the pan. You can also cover the pan with a lid to help it melt even more quickly.
