The New Buffalo Chicken Recipe You Need to Try

We love muffin-tin recipes for their simplicity and small-but-mighty flavor punch, and this buffalo chicken tater tot cup is no exception. Made with just a few ingredients, this mini meal is a great way to spice up your weeknight dinner routine.
Muffin-Tin Buffalo Chicken Tater Tots Cups

Tater Tot casseroles have been popular with families for many years and it’s no surprise why: they’re warm, comforting, easy to toss together and completely delicious. Why not transform this family favorite into an appetizer that can be enjoyed for game day snacking or any get-together? (Or you can make them for dinner, because bite-sized is always more fun!)

To put an extra twist on the tradition, I brought in a spicy flavor that every loves: Buffalo chicken!

You’re going to need a bag of frozen miniature Tater Tots, some cooked, diced chicken, buffalo sauce, cream cheese, frozen mixed vegetables, and shredded cheddar cheese.

Each cup in your regular-sized muffin tin will need 6 mini Tater Tots. Bake them for 15 minutes.

While the Tater Tots are in the oven, prepare the filling. Put the chicken, Buffalo sauce, cream cheese and frozen mixed vegetables into a sauce pan and set over low heat to melt together. Stir this mixture often so the cream cheese doesn’t burn on the bottom of the pan. You can also cover the pan with a lid to help it melt even more quickly.

When the Tots come out of the oven, use a spoon to press the mixture into a crust in the bottom and up the sides of each muffin cup.

Spoon the Buffalo chicken filling into the crust and then sprinkle the tops with cheddar cheese.

Top the muffins with six more Tots each and pop it all back in the oven.

These will bake up golden brown and crispy on the outside and creamy on the inside. Serve them with a side of blue cheese or ranch dressing for dipping!

Ingredients

    • 12dozen Mini Ore-Ida™ Tater Tots™ frozen potatoes
    • 1package (8 oz) cream cheese
    • 1/2cup Frank's™ RedHot™ Buffalo Wings Sauce
    • 1 1/2cups diced cooked chicken
    • 1cup frozen mixed vegetables
    • 1/4cup shredded Cheddar cheese (1 oz)
    • Ranch or blue cheese dressing

Directions

  • 1Heat oven to 400°F. Place 6 Mini Tater Tots™ into each of 12 ungreased regular-size muffin cups. Bake 15 minutes.
  • 2Meanwhile, in 2-quart saucepan, heat cream cheese, Buffalo wing sauce, chicken and frozen vegetables over low heat, stirring frequently, about 10 minutes or until cream cheese is melted and mixture is creamy.
  • 3Remove muffin pan from oven; use back of spoon to press Mini Tater Tots™ into each muffin cup to form a crust.
  • 4Spoon chicken mixture into each muffin cup; top with shredded cheese. Top cheese in each muffin with 6 Mini Tater Tots™.
  • 5Bake 20 minutes. Cool 5 minutes before removing from muffin cups. Serve with dressing for dipping.
