The Pancake Casserole That Wins the Weekend

We took pancakes to the next level and made them into a casserole that’s irresistible. Topped with a cinnamon, brown sugar streusel and made easy with the help of Bisquick, you’ll win your weekend morning with this sweet breakfast.

Pancakes are delicious on their own but adding a buttery, cinnamon streusel top and baking it in a single dish (no flipping necessary!) really takes this recipe to the next level. This cinnamon streusel pancake casserole was made for those who like a hands-off weekend breakfast approach. It’s quick, easy, feeds a crowd, and most importantly, delicious.

The batter comes together quickly thanks to Bisquick Baking Mix, which gets extra flavor from brown sugar, cinnamon, vanilla, and melted butter.

The thing that takes this casserole to the next level is the cinnamon streusel topping. Just butter, flour, brown sugar, and cinnamon.

The streusel come together with some larger, pebbly pieces, as well as some finer crumbs. If yours doesn’t clump together as well as you’d like, try popping the topping in the refrigerator for about 15 minutes.

Then, spread the batter into a greased pan and cover the top with the streusel.

The casserole bakes up golden, with some sunken spots of streusel throughout, so each mouthful has some tender pancake and crunchy, sweetly spiced streusel.
