Copycat Apple Pie Larabar Bars

As a mom, I’m never without a healthy supply of grab-and-go snacks. What mom has time to sit down and eat three solid, peaceful meals each day? I find that if I don’t have a strategy in place, I end up snacking on unhealthy options, so planning ahead is the key to staying on track.

Lärabars are one of my tried-and-true nutritious snacks. I’ve been a fan of these fruit and nut bars for years because I can look at the label and see real, wholesome ingredients. Because the ingredients are so clean and simple, it’s also easy to make your own at home when you have a little extra time on your hands.

First, combine all the ingredients together in a food processor fitted with a metal blade attachment. Process the mixture for 2 to 3 minutes, until the mixture just starts to come together in a ball and pull away from the sides.

Turn mixture out onto a parchment-lined 8x8-inch baking pan. Press mixture into an even layer in the pan.

Refrigerate 1 hour to set. Turn bars out onto a cutting board and cut into either 8 large rectangles or 16 smaller squares. Store leftovers in a re-sealable plastic container or zip-top bag and store in the refrigerator.
