Each fall, pumpkin-flavored treats take over the cases of my favorite coffee shops and bakeries. Everyone seems to go crazy for this seasonal flavor, everyone that is, except me. Though I am a self-proclaimed pumpkin-hater, I’m slowly being won over by delicious pumpkin cakes, pies, and other sweet treats.
A few weeks ago, I headed to my local coffee shop and order up a pumpkin spice latte. I needed to see what all the fuss was about. Shockingly I was impressed by how subtle the pumpkin flavor was, and how the drink just tasted liked fall. It was slightly sweet and scented with warm spices.
Never one to pass up an opportunity, I began brainstorming ways to bring the pumpkin spice latte flavors into a baked treat. And what better way to do that than with a mug cake? It doesn’t even have to leave the mug.
In a small bowl, whisk together the melted butter, egg, espresso or coffee, and pumpkin puree. Add the sugar, Bisquick baking mix, pumpkin pie spice, and salt. Mix until incorporated, batter may be lumpy.
If you’ve never made a mug cake before, you are in for a treat. You can satisfy your cake craving in 5 minutes. Simply whisk together a few simple ingredients, pop it in the microwave for a few minutes and you’re done! Top this easy pumpkin- and coffee-scented cake with a swirl of whipped cream and sprinkling of cinnamon to complete the latte look.
