Ah summer, prime season for what’s quite possibly my favorite flavor combos of all time…the s’more. Toasted marshmallows. Melty chocolate. Crisp graham crackers. All those flavors in one bite spell summer (and heaven!) to me. As I’m always game for combining these flavors in new ways, I grabbed a pouch of Betty Crocker Oatmeal Cookie Mix, a bag of marshmallows and some chocolate and turned on the oven. The results? Oh my yum. The plate of cookies was gone before the evening was over. And we didn’t even need a campfire!
First grab the cookie mix and mix up the dough as directed on the pouch. Betty makes it soooo simple, this step literally takes two minutes.
I used a medium cookie scoop to plop the dough on cookie sheets. Bake at 375 for about 11 minutes. You want them to be golden brown, but not overdone since they are going to go in the oven again.
While the cookies are baking, I tackled the task of cutting 12 large marshmallows in half. Kitchen shears sprayed with cooking spray make it easy!
When the cookies come out of the oven, place the marshmallows in the middle, sticky side down.
Now, pop them back in the oven, under the broiler. Do not take your eyes off of these bad boys! They will brown up very, very quickly. Once you remove the pan from the oven, place a unwrapped chocolate candy in the middle of each gooey, toasty marshmallow.
And that’s it! You are now ready to enter s’more heaven! Might want to make a double batch of these babies, ‘cause boy, will they go fast. Serve them toasty warm and enjoy!
