How do you turn cupcakes into a high-end treat? Make Boston Cream Bites! Perfectly proportioned mini cream pies, they’re a simple dessert that will impress even your fanciest holiday dinner guests. Dessert doesn’t get any better than this!
Here’s how you can make these one-bite wonders in your own kitchen. Prepare a Betty Crocker® French Vanilla cake mix according to package directions. Spoon the mix into a mini muffin tin which has been generously greased and floured.
Once the cupcakes have baked, cool them completely before gently removing them from the muffin tin.
Slice the cupcakes in half and spoon vanilla pudding in the center of each. Replace the tops.
Spread a bit of chocolate ganache over each cupcake.
Place your pretty cupcakes on a plate. Allow the chocolate topping to cool slightly before serving.

1box Betty Crocker™ Delights Super Moist™ French Vanilla Cake Mix

3/4cup water

1/3cup butter, melted

2eggs

1cup prepared vanilla pudding

1cup semisweet chocolate chips

3/4cup whipping cream
Directions

1Heat oven to 350°F. Generously grease 48 mini muffin cups with shortening or cooking spray; lightly flour cups.

2In large bowl, stir together cake mix, water, melted butter and eggs until just combined. Spoon batter evenly into muffin cups.

3Bake 9 to 12 minutes or just until cupcakes spring back when touched lightly in center. Cool 5 minutes in pans. Remove from muffin cups to cooling racks. Cool completely, about 15 minutes.

4Using sharp knife, cut top off of each cupcake. Spoon 1 teaspoon pudding onto center of bottom half of each cupcake. Cover with top halves of cupcakes.

5In small microwavable bowl, microwave chocolate chips and whipping cream uncovered on High 45 to 60 seconds or until chips are melted and mixture can be stirred smooth. Let stand 10 to 15 minutes at room temperature or until thickened enough to spread. Place waxed paper or cooking parchment paper under cooling racks. Spoon and spread chocolate mixture on top of each bite. Refrigerate until chocolate is set, about 10 minutes. Store covered in refrigerator.
