Bacon Pancake Cupcakes

Bacon, pancakes, frosting and cupcakes? You’re not dreaming. This crave-worthy, sweet and savory recipe is perfect for a brunch party.

Bacon with maple syrup just might be the first, and most classic, salty-sweet brunch combo. Throw in some butter and pancakes and you’ve got a breakfast worth craving every single day until the end of time. 

These cupcakes are basically pancakes, baked up in a different shape. It’s truly a pancake miracle! It’s not easy to bring pancakes on the road, but this cupcake version makes them a portable breakfast dream. Eat one right away and chill the rest to share (if you want to). Serve them up at your next brunch party, or simply make a batch for the pancake-lovers in your life!

To start, gather your ingredients (see exact list of ingredients and measurements below). Measure out maple syrup and vanilla together.

Mix it all together. Pour the wet ingredients over the dry ingredients.

Divide evenly between all 12 muffin cups. Sprinkle with crumbled bacon bits. Pop those beauties in the oven.

Bake for 20 minutes, and then allow them to cool completely before frosting.

Pipe frosting onto cupcakes and sprinkle with more bacon. You can now get your cupcake on, breakfast-style. Enjoy!
