What kind of potato is best for baking or boiling?

Starchy Russet or Idaho potatoes make for excellent fluffy baked potatoes. For mashed potatoes, try a waxy potato such as Yukon golds, fingerlings, reds or whites; they all hold up well to boiling water or broth.
