Walnut-Coated Walleye

Ingredients
- 3/4 lb walleye fillets, cut into 2 serving pieces
- 2 tablespoons all-purpose flour
- 1 egg or 2 egg whites
- 1 tablespoon water
- 1/4 cup all-purpose flour
- 1/4 cup finely chopped walnuts
- 1 tablespoon chopped fresh chives
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 teaspoons canola oil
Instructions

Step1Rinse fish; pat dry with paper towels. Place 2 tablespoons flour on sheet of waxed paper. In shallow dish, beat egg and water with fork or wire whisk until well mixed. In another shallow dish, mix 1/4 cup flour, the walnuts, chives, salt and pepper.

Step2Coat fish with flour, then dip into egg mixture. Coat both sides with walnut mixture.

Step3In 10-inch nonstick skillet, heat oil over medium heat. Add fish; cook 5 to 10 minutes, turning once, until fish flakes easily with fork.
