Spicy Pork Carnita Soup (Cooking for 2)

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, halved, thinly sliced
- 1 green bell pepper, cut into strips
- 1 cup Progresso™ Classic chicken broth (from 32-oz carton)
- 1/2 cup beer
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1 can (10.5 oz) diced tomatoes with green chiles, undrained
- 2 boneless pork loin chops, trimmed of fat and cut into 1/2-inch cubes (about 8 oz)
- 1 tablespoon chopped fresh cilantro leaves
- 1 tablespoon fresh lime juice
- Cilantro leaves, if desired

Step1In 2-quart saucepan, heat olive oil over medium heat. Add onion and pepper; cook 4 to 5 minutes or until vegetables are tender. Stir in chicken broth, beer, chili powder, salt, cumin and tomatoes.

Step2Heat to boiling; reduce heat. Cover and simmer 5 minutes. Stir in pork; cover and simmer 5 to 8 minutes or until pork is no longer pink in center. Stir in chopped cilantro and lime juice. Garnish with cilantro leaves.
