Heat Cream

Bring the cream just to a boil before reducing the heat. Don't let it stay at a hard boil too long.

Reduce the Cream

Simmer the cream until it's thick enough to pull a spatula or spoon through it which leaves a line showing the bottom of the pan.

Add the Cheese

Stirring in the Parmesan cheese at this point allows it to melt and lose its graininess for a superbly smooth sauce.

Stir in the Butter

Adding the cold butter slowly creates a smooth, thick sauce that won't break.

Toss with Pasta

Storing Leftover Alfredo Sauce

While this alfredo sauce recipe is best served immediately, it can be stored for several days and reheated on the stovetop or in the microwave.

Fridge: Place leftovers in a covered container and refrigerate immediately. The alfredo sauce can be refrigerated for up to 3 days.

Reheat: To reheat the leftovers, transfer individual servings into a small saucepan and cook over low heat, whisking often, until simmering. You can also microwave the sauce by placing in a small microwavable bowl. Cover loosely and reheat on medium-high (70%), stirring every 30 seconds, until thoroughly heated. If sauce is too thick, stir in water a tablespoonful at a time, until desired consistency is reached.

Freeze: We do not recommend freezing, as the dairy in the mixture could separate and become watery.

Can I Substitute Milk Instead of Cream?

For this alfredo sauce recipe, we start by reducing heavy whipping cream. To achieve a luxuriously creamy alfredo sauce that won’t break as other ingredients are added, real cream is essential.

Milk, and even half and half, simply will not work in the same way. Trying to use either of these as substitutes could cause the sauce to break, and it would also be quite thin. But this is such an easy recipe when you use the correct ingredients, so just be sure to grab some heavy cream, and you’ll have a perfect, easy alfredo sauce in no time!
