Ingredients
- 1 boneless pork loin roast (1 1/2 lb), trimmed of fat
- 1/2 teaspoon olive oil
- 3 tablespoons chopped fresh sage leaves
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh oregano leaves
- 4 1/2 teaspoons chopped fresh chives
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper

Step1Heat oven to 375°F. Spray broiler pan with cooking spray.

Step2Rub pork with oil. In small bowl, mix remaining ingredients. Rub mixture over pork. Place pork on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of pork and does not rest in fat.

Step3Roast uncovered 1 hour or until thermometer reads 145°F. Cover loosely with foil; let stand at least 3 minutes.
