Ingredients

  • 1 lb fresh green beans, cut into 1-inch pieces
  • 4 slices bacon, cut up
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium tomato, chopped (3/4 cup)
  • 1 clove garlic, finely chopped
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • Dash of pepper
  • 2 tablespoons lemon or lime juice

Instructions

    In 2-quart saucepan, place green beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender; drain. Immediately rinse with cold water; drain.

    Meanwhile, in 10-inch skillet, cook bacon over medium-high heat, stirring frequently, until crisp; drain all but 1 tablespoon fat from skillet. Drain bacon on paper towels. Cook onion in bacon fat over medium heat, stirring occasionally, until tender.

    Stir tomato, garlic, oregano, salt and pepper into onion. Simmer uncovered 5 minutes. Stir in green beans; heat through. Drizzle with lemon juice; sprinkle with bacon.
