Ingredients
- 2 teaspoons vegetable oil
- 1/2 lb fully cooked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices
- 1 large onion, sliced
- 1 medium green bell pepper, thinly sliced
- 8 large eggs
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/8 to 1/4 teaspoon pepper
Instructions
-
Step1In 10-inch skillet, heat oil over medium heat. Cook kielbasa, onion and bell pepper in oil about 5 minutes, stirring occasionally, until vegetables are tender.
-
Step2Meanwhile, in medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until blended.
-
Step3Pour egg mixture over kielbasa mixture. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.
