Ingredients
- 1 small zucchini, chopped (1/2 cup)
- 1 large tomato, chopped (1 cup)
- 1 small onion, chopped (1/4 cup)
- 1/3 cup grated Parmesan cheese
- 1/4 cup Bisquick Heart Smart® mix
- 1/2 cup fat-free (skim) milk
- 1/2 cup fat-free egg product or 2 eggs, beaten
- 1/4 teaspoon salt
- Dash pepper
Instructions

Step1Heat oven to 400°F. Lightly spray 9x5-inch (1 1/2-quart) glass loaf dish with cooking spray. Sprinkle zucchini, tomato, onion and cheese in dish.

Step2In medium bowl, stir remaining ingredients with fork or whisk until blended. Pour over vegetables and cheese.

Step3Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
