Cranberry-Orange Oatmeal Cookies

Ingredients

  • 1/2 cup canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups old-fashioned or quick-cooking oats
  • 2/3 cup whole wheat flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup orange-flavored dried cranberries
  • 1/4 cup chopped walnuts

Instructions

    Heat oven to 350°F. In large bowl, mix oil, sugars, vanilla and egg with spoon. Stir in oats, flour, ginger, allspice, baking soda and salt. Stir in cranberries and walnuts.

    Onto ungreased cookie sheet, drop dough by tablespoonfuls 2 inches apart.

    Bake 11 to 14 minutes or until edges turn golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
