Chocolate Chip Streusel Cake

Ingredients

Coffee Cake

  • 1 cup Gold Medal™ whole wheat flour
  • 1/2 cup Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup cold butter or margarine, cut into pieces
  • 2/3 cup buttermilk
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup miniature semisweet chocolate chips

Streusel

  • 1/3 cup Gold Medal™ whole wheat flour
  • 1/3 cup packed brown sugar
  • 1/4 cup cold butter or margarine
  • 1/4 cup chopped walnuts

Instructions

    Heat oven to 350°F. Grease bottom only of 8-inch square pan with shortening or cooking spray.

    In large bowl, mix 1 cup whole wheat flour, the all-purpose flour, granulated sugar, baking powder, salt and baking soda. Cut in butter, using pastry blender or fork, until mixture is crumbly. Add buttermilk, vanilla and egg; stir until well blended. Stir in chocolate chips. Spread in pan.

    In small bowl, mix streusel ingredients with fork until mixture is crumbly. Sprinkle over batter.

    Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Serve warm or cool.
