Chocolate Peppermint Buche de Noel

Looking for a festive dessert to dazzle your holiday dinner guests? Barrett Radziun’s cute and creative take on Betty’s traditional Yule Log Cake is bound to be the star of any table.

This wonderful cake was inspired by one of Barrett’s favorite nostalgic treats: a chocolate mint candy. The cake is made with Betty Crocker™ Super Moist™ Devil's Food Cake Mix and filled with plenty of peppermint buttercream, giving it the perfect combination of chocolate and mint flavor that positively melts in your mouth.

Barrett tops his beautiful Buche de Noel with a velvety, chocolate ganache. It’s decorated with adorable touches like rosemary, cranberries, powdered sugar “snow” and, in Barrett’s case, realistic meringue mushrooms. This extra-special holiday cake is like a mini-winter wonderland on a plate!

Barrett’s Tips

  • Roll the cake in a clean kitchen towel dusted with powdered sugar as soon as it comes out of the oven. Rolling the cake while still hot will keep it from cracking. Then, allow the cake to cool completely in the towel before unrolling it.
  • Adding a few drops of peppermint extract to the buttercream frosting makes it extra special. Start with a small amount and taste the frosting after you’ve mixed it before deciding if you’d like to add more. If you add too much, you risk the frosting tasting like toothpaste!
  • After icing the cake, run the tines of a fork through the chocolate ganache to create a texture like tree bark. Go ahead and get creative—adding swoops and swirls will make the pattern even more realistic.
