Now that you’ve got your recipe or recipes, here are a couple of quick tips to keep in mind when making cupcakes.
- Never fill cupcakes more than ⅔ full with batter.
- Use shiny pans that reflect heat for tender, light cakes.
- To determine doneness use the toothpick test, i.e. when a toothpick inserted in the center of the cake comes out clean, cupcakes are done.
- Cool cupcakes completely before frosting.
