Buffalo Chicken Bites

Love buffalo chicken? Then you’ll love these easy and elegant Buffalo Chicken Bites.

I don’t think I’ve met anyone who didn’t like Buffalo chicken. Luckily, in the recipe world of Buffalo chicken, there are many options to choose from. Besides the traditional Buffalo chicken wings, one of my favorite ways to enjoy the flavor is Buffalo chicken dip. It’s comfort food in a bowl. 

I’ve taken that favorite and given it a twist to create Buffalo Chicken Bites. The warm cheesy, creamy and spicy chicken mixture is bundled into a crispy, crunchy wonton. Eating just one isn’t possible. I’ve tried and failed miserably!

These tasty bites make great game day treats, get-together appetizers or snacks for whenever I’m craving Buffalo chicken. The recipe makes 24, but I will tell you that won’t be enough. These DO NOT last long. Go ahead and save yourself by doubling the recipe. 

If you pick up a rotisserie chicken from the market (which is much more easy than buying a whole chicken and roasting it myself), that will typically yield enough to make three pans of these babies, 72 total. So if you’re having a big get together, that’s the way to go. 

 It’s an easy and elegant appetizer!

Ingredients

    • 2cups shredded or pulled deli rotisserie chicken (from 2- to 3-lb chicken)
    • 1package (8 oz) cream cheese, softened
    • 1 1/2cups shredded Mexican cheese blend (6 oz)
    • 2tablespoons Frank's™ RedHot™ Buffalo Wings Sauce
    • 24wonton skins
    • Sliced green onion tops, if desired

Directions

  • 1Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
  • 2In medium bowl, mix chicken, cream cheese, 1 cup of the Mexican cheese and the Buffalo wing sauce until well blended.
  • 3Place 1 wonton skin in each muffin cup. Spoon chicken mixture evenly into cups.
  • 4Bake 6 minutes. Sprinkle 1 teaspoon of the remaining Mexican cheese into each cup. Bake 2 minutes longer or until wontons are lightly browned and cheese is melted. Garnish with green onion tops. Serve warm.
