Ten Cool Things to Do with Tortillas

Tortillas are so versatile! With a little creativity, they can be the base for many snacks, meals and desserts.

I always keep a package of tortillas in the refrigerator. In a pinch, you can create a meal—even dessert—with items you have on hand.

Think beyond quesadillas and try these 10 recipe ideas. Several are kid-friendly, so let them join in on the fun. They can help spread, sprinkle and roll the tortillas into a tasty after-school snack. 

  1. Breakfast Quesadilla. Place scrambled eggs, crumbled crisp bacon and shredded cheddar cheese on one tortilla. Top with a second tortilla, and brown on both sides. Serve with sour cream and salsa. 
  2. Mexican Cheese Crisp. Sprinkle a tortilla with shredded cheddar cheese, cooked and crumbled ground beef or chorizo and jalapeno slices. Broil until bubbly and brown.
  3. Italian Pinwheels. Spread cream cheese on one side of a tortilla and top with a layer of pesto. Sprinkle with sliced prosciutto, chopped sun-dried tomatoes and minced basil. Roll up, refrigerate and slice when ready to eat. 
  4. Thai Chicken Tortilla Wraps. Lay out a tortilla and brush with butter. Turn over and place on a baking sheet. To the right of the center, spread a strip of peanut sauce, shredded mozzarella cheese, cooked chicken, shredded carrots and bean sprouts. Roll up tightly. Sprinkle with Parmesan, and bake at 500 degrees for 12 minutes. Slice and serve. 
  5. Sweet Chips and Salsa. Brush melted butter over tortillas and sprinkle with cinnamon-sugar. Cut into triangles. Bake for 10-15 minutes or until lightly brown. Serve with fruit salsa. 
  6. Seasoned Flatbread. Brush a tortilla with olive oil and honey. Sprinkle with sea salt, crushed red pepper flakes and rosemary. Bake at 350 degrees until lightly brown, about 5 minutes. 
  7. Barbecue Chicken Cheese Crisp. Top a tortilla with barbecue sauce, shredded chicken, red onion slices, shredded mozzarella and minced cilantro. Broil until bubbly and brown. 
  8. Peaches and Cream. Top a tortilla with peach preserves, mascarpone cheese, sliced peaches and chopped pecans. Brown in a skillet. Serve with whipped cream and a sprinkle of cinnamon. 
  9. Mini Ice Cream and Strawberry Cups. Cut circles out of tortillas; push in muffin tins coated with cooking spray. Sprinkle with cinnamon-sugar. Bake 5 minutes at 350 degrees. Top with a mini scoop of ice cream and sliced strawberries.
