My favorite kind of dinner is the one-pot meal. Here’s a perfect example: Slow-Cooker Chicken Alfredo Tortellini. This dish starts with ordinary cheese tortellini and is taken to the next level by adding chicken, mushrooms, garlic, baby spinach and a rich, creamy Alfredo sauce.
This dinner is amazingly easy to put together. You just layer the chicken, mushrooms, and sauce into the crock in the morning and let it simmer happily by itself for five hours. By dinnertime, the chicken is so tender that you can pull it apart with a couple of forks. Then all you have to do is stir in the tortellini and spinach, and let it cook for about ten more minutes. And that’s it—dinner is served! You can dish it up right from the crock and pass the Parmesan.
Place chicken breasts into a 6-quart slow cooker. Season with salt and pepper. Top with sliced mushrooms.
