Pizza + Pancakes = Mini Pizza Pancakes

Make super-quick pizza-inspired pancakes using Bisquick and other simple ingredients.

I believe that even subpar pizza is pizza. It’s pretty much always delicious and dang hard to mess up the trifecta of crust, sauce and cheese. This recipe gets you from hungry to pizza-eating in the same amount of time it would take you to make pancakes, plus a little bronzing under the broiler. There are few times in my life that I will turn down pizza or pancakes, and when they come together to make these fun and easy Mini Pizza Pancakes, it’s basically impossible not to try at least one…or a few! I mean, it’s a tender pancake in a pizza outfit, and there’s a lot to love. 

These pancakes are made following the simple Bisquick method, but I’ve added some cornmeal and chives for a punch of texture and flavor. The cornmeal and chives in these pancakes make a decidedly savory base for pizza fixin’s. Traditional pizza toppings, plus a quick trip under the broiler, makes these pancakes look just like the real deal.

We begin by mixing the classic Bisquick pancake ingredients with cornmeal.

Then, we fold in bright, savory chives.

Next, we cook little pancakes until they’re golden brown. Then it’s time to pile on the toppings.

Pop them under the broiler until they’re golden brown, and you’re DONE!

Ingredients

    • 2cups Original Bisquick™ mix
    • 1/2cup yellow cornmeal
    • 2eggs
    • 1 1/4cups milk
    • 2tablespoons chopped fresh chives
    • 1/2cup marinara or pizza sauce
    • 1cup shredded mozzarella cheese (4 oz)
    • 1/2cup sliced mini pepperoni
    • 1tablespoon chopped fresh chives

Directions

  • 1In medium bowl, mix Bisquick mix and cornmeal. In measuring cup, mix eggs and milk. Stir milk mixture into Bisquick mixture to combine; fold in 2 tablespoons chives.
  • 2Heat 10-inch or larger nonstick skillet or griddle over medium heat (325°F). Brush lightly with oil. Spoon rounds of about 3 tablespoons batter onto skillet to make mini pancakes. Once bubbles begin to form on surface of batter and edges begin to dry, turn and continue to cook until golden brown. Transfer to plate. Repeat with remaining batter.
  • 3Set oven control to broil.
  • 4Place cooked pancakes on parchment-lined cookie sheet. Spoon marinara sauce onto each pancake; sprinkle with cheese, pepperoni and the 1 tablespoon chives. Broil with tops 4 to 5 inches from heat 1 to 3 minutes or until cheese is melted, golden in spots, and bubbly. Serve immediately.
