For lots of folks, the arrival of Fall means cooler temperatures, heartier meals, warmer clothes, pumpkin patches, and football! When the leaves start falling, the team spirit ramps up. With football games, come the tailgate parties, and you can't have an official tailgate party without food.

One of my favorite football snacks are Spicy Pigs in a Blanket Dunkers with Sriracha Dipping Sauce! This isn't your average kiddy food, either. Savory pancakes with garlic and green onion are wrapped around sausage with pepper jack cheese. To top it off, we make a delicious and spicy sriracha sauce with mayonnaise, sour cream, and sriracha. These puppies are sure to score a touchdown at your next tailgate! Offer up a grown up version of the childhood classic pigs in the blanket for your next Sunday football get together. The spicy flavors from the pepper jack cheese and the Sriracha gives the appetizers great zing.

Preheat the oven to 250°F. Cook the sausage in a medium skillet according to the package instructions.

In a large bowl, stir together the Bisquick®, milk, and egg. Add the chopped onions and garlic powder and mix until just combined.

Heat a large non-stick skillet over medium heat. Lightly spray it with nonstick cooking spray and pour two heaping tablespoonsful of the pancake batter to the skillet. Cook the pancake until the edges are dry and the pancake is bubbly. Flip the pancake and cook until it is golden. Repeat with remaining batter and keeping the finished pancakes on a heatproof platter in the warm oven.

While the pancakes are cooking, make the sriracha dipping sauce by combining the mayonnaise, sour cream, and sriracha in a medium bowl. Add sriracha to reach your desired heat level. Store in the refrigerator.

Once the pancakes and sausage are done, lay a piece of the thinly sliced pepper jack cheese on each pancake and top with a piece of sausage in the middle. Roll the pancake around the sausage and secure it together with a large toothpick. Keep warm and serve with the Sriracha Dipping Sauce.

Spicy Green Onion Pigs in a Blanket with Sriracha Dipping Sauce

Ingredients

    • 1package (12 oz) uncooked Johnsonville® Original breakfast sausage links
    • 1 1/2cups Original Bisquick™ mix
    • 1cup milk
    • 1egg
    • 4green onions, chopped (1/4 cup)
    • 1/2teaspoon garlic powder
    • 1/4cup mayonnaise
    • 1/4sour cream
    • 1to 2 teaspoons Sriracha sauce
    • 14thin slices pepper Jack cheese

Directions

  • 1Heat oven to 250°F.
  • 2Cook sausage links in skillet as directed on package.
  • 3In large bowl, stir together Bisquick mix, milk and egg. Add chopped green onions and garlic powder, and mix until just combined.
  • 4Heat 10-inch nonstick skillet over medium heat. Lightly grease if necessary. For each pancake, pour about 2 heaping tablespoonsful batter into hot skillet. Cook pancake until edges are dry and pancake is bubbly. Turn; cook until golden. Repeat with remaining batter, keeping finished pancakes on heatproof platter in warm oven.
  • 5In medium bowl, stir mayonnaise, sour cream, and desired amount of Sriracha sauce. Store in refrigerator.
  • 6Once the pancakes and sausage are done, place a piece of thinly sliced cheese on each pancake, and top with sausage link. Roll pancake around sausage, and secure with large toothpick. Keep warm, and serve with sauce.
