It’s such a fun and upbeat song and makes me smile every time. A lot like this cake, actually.
Did I mention that it’s a Piña Colada Upside-Down Cake? Um hello! But don’t worry -- it’s safe for the kids too. It’s totally a virgin piña colada. All the way. Unless you don’t want it to be. Then I suggest you add a shot of rum to the batter.
This cake is something else. There’s a caramel-y, coconut-y, pineapple-y top layer that is just divine. Then comes the moist, vanilla cake portion with a hint of coconut flavor. It’s not in your face coconut, but more subtle. Like a good drink.
This is a perfect cake to whip up in the afternoon as a special after dinner surprise. It’s actually rather easy -- and really only has about 10 minutes hands-on time. But it sure looks like you spent a lot more time on it. Totally a good thing.
