Key Lime-Cream Cheese Crumble Cake

Dig into this dessert that has a taste of Key West in every bite!

Key limes are extremely popular here in South Florida. For me, the tart distinctive taste screams warm breezes, sunshine and feet in the sand. My family and I only live about three hours north of Key West so now and then we drive down to the Keys and enjoy the sunshine and slow pace of things, and of course, Key Lime Pie

I love the taste of Key limes so I am always looking for fresh new ways to incorporate them into a dessert, salad dressing, or marinade. Fortunately you don’t have to make a trip to Key West to enjoy the flavor of Key limes. 

A box of Betty Crocker® Supermoist® Vanilla Cake Mix and a few other ingredients make this dessert so easy to prepare. 

I start by making the box cake mix into the base layer, but before I do, I remove one cup of the cake mix and set it aside to later use as the topping. Then, I combine the cake mix with some melted butter and an egg. This makes soft dough that can be patted down into the base of a greased 9 x 13-inch pan.

I then mix the filling and pour it over the base and sprinkle it with the remainder of the cake mix and some nuts and butter.

Once it comes out of the oven I let it cool slightly before serving it, although I must admit I love the way it tastes warm out of the oven with a cup of coffee.

Spread a little sunshine today with my Key Lime Cream Cheese Crumble Cake.

Ingredients

  • Base
    • 1box Betty Crocker™ Super Moist™ Vanilla Cake Mix, reserving 1 cup for topping
    • 1/2cup butter, melted
    • 1egg
  • Filling
    • 1package (8 oz) cream cheese, softened
    • 1can (14 oz) sweetened condensed milk (not evaporated)
    • 3/4cup Key lime juice
    • 2eggs, beaten
  • Topping
    • Reserved 1 cup cake mix
    • 1cup chopped pecans, walnuts or combination of both
    • 3tablespoons butter, softened
    • Powdered sugar for garnish

Directions

  • 1Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, reserve 1 cup of the dry cake mix for the topping; set aside.
  • 2In medium bowl, mix remaining cake mix, 1/2 cup melted butter and 1 egg until well combined. Press in bottom of pan; set aside.
  • 3In large bowl, beat cream cheese, sweetened condensed milk, lime juice and 2 eggs with electric mixer on medium speed until smooth. Pour filling evenly over base in pan.
  • 4With fork, mix reserved cake mix with pecans and 3 tablespoons softened butter until crumbly. Sprinkle evenly over filling.
  • 5Bake about 45 minutes or until golden brown. Cool in pan at least 20 minutes. Before serving, sprinkle individual servings with powdered sugar.
