How to Make Pumpkin-Chocolate Chip Quick Bread

Spice up your fall baking routine with this pumpkin chocolate chip bread topped with mocha-flavored glaze.

What do you love most about fall? Is it the changing colors of the leaves, the crisp-cool weather, the apple picking or the spiced pumpkin lattes? For me, my favorite part of fall happens in the kitchen. I can’t get enough of the classic fall flavors like pumpkin, apple, squash and spices.

This mocha-glazed pumpkin chocolate chip bread is one decadent and delicious way to celebrate the season in your own kitchen. Quick breads are great to bake because not only are they, well…quick, but they make for a great dessert or breakfast bread, and can be easily wrapped up and gifted to loved ones. This scrumptious quick bread is made with Bisquick — making the process even easier!

First, make sure you have all the ingredients needed to make the bread.

Combine all of the bread ingredients except for the chocolate chips in a large bowl, then stir in the chips carefully.

Pour the bread into a loaf pan and spread the batter all the way to the edges.

Bake the bread until a toothpick inserted in the center comes out clean. Let it cool in the loaf pan for a few minutes, then carefully remove it from the loaf pan and transfer it to a cooling rack to cool completely.

When the bread is fully cooled, make the mocha glaze. You’ll need some powdered sugar, cocoa powder, instant espresso, vanilla and water.

Pour the glaze evenly over the fully cooled bread, then let the glaze set before slicing. Enjoy!

Ingredients

  • Bread
    • 2 1/3cups Original Bisquick™ mix
    • 1cup granulated sugar
    • 1/4cup packed light brown sugar
    • 1cup canned pumpkin (not pumpkin pie mix)
    • 1/3cup vegetable oil
    • 3eggs
    • 1/2cup chocolate chips
  • Glaze
    • 1/2cup powdered sugar
    • 1 1/2teaspoons unsweetened baking cocoa
    • 1/2teaspoon instant espresso or coffee granules or crystals
    • 1tablespoon plus 1 teaspoon water
    • 1/2teaspoon vanilla

Directions

  • 1Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9x5-inch loaf pan.
  • 2In large bowl, stir together all ingredients for bread except chocolate chips until well combined. Fold in chocolate chips. Pour batter into pan.
  • 3Bake 45 to 60 minutes or until toothpick inserted in center of loaf comes out clean. Cool 5 minutes in pan. Remove from pan to cooling rack to cool completely.
  • 4To make Glaze: In small bowl, stir Glaze ingredients, adding more powdered sugar or water as needed until glaze is thick and drizzly.
  • 5Spoon glaze evenly over completely cooled bread. Let set completely before slicing.
