Sugar cookies frosted with buttercream are a classic treat that everyone loves, but I must admit I hardly ever make them. The chilling, rolling, cutting, baking, frosting—it’s enough work to tire anyone out! These easy sugar cookie bars take the fuss out of the equation. Start with Betty Crocker Sugar Cookie Mix, top with a homemade buttercream frosting and get ready to serve up some smiles.

To start, combine the cookie mix with the room temperature butter and an egg.

Beat in a stand mixer or with a hand-held mixer until a soft dough forms.

Press the cookie dough evenly into a 9-inch pan greased or lined with parchment paper. I like to reuse the wrapper from the butter to work with the dough as it is sticky and the butter wrapper comes pre-greased.

Bake the bars at 375 degrees for 25-30 minutes until golden brown and then cool completely. Meanwhile, make the frosting by beating sifted powdered sugar, butter, heavy cream and vanilla extract together until smooth and creamy. (Feel free to tint the frosting with food coloring, if you like!)

Frost the bars and cover with sprinkles, if desired.

Ingredients

  • Bars
    • 1pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
    • 1/2cup unsalted butter, room temperature
    • 1egg
  • Frosting
    • 3cups powdered sugar, sifted
    • 1/2cup unsalted butter, room temperature
    • 1/4cup heavy whipping cream
    • 1teaspoon vanilla
    • Food color, if desired
    • Candy sprinkles, if desired

Directions

  • 1Heat oven to 375°F. Line 9-inch square pan with cooking parchment paper or spray with cooking spray.
  • 2In large bowl, beat cookie mix, 1/2 cup butter and the egg with electric mixer on medium speed until a soft dough forms. Press dough in bottom of pan.
  • 3Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes.
  • 4In medium bowl, beat powdered sugar, 1/2 cup butter, the whipping cream and vanilla with electric mixer on medium speed until smooth and creamy. Stir in food color until well blended. Spread frosting over baked cookie bars. Top with candy sprinkles. Cut into 4 rows by 4 rows.
